Orange-Ginger Carrots

Ingredients:

Vegetable cooking spray
1 teaspoon reduced calorie margarine
1 pound carrots, scraped and cut into thin strips
2 tablespoons unsweetened orange juice
1 teaspoon brown sugar
_ teaspoon ground ginger
1/8 teaspoon salt
Dash of pepper
1 _ teaspoons sesame seeds, toasted

Coat a large non-stick skillet with cooking spray. Add margarine; place over medium heat until margarine melts. Add carrots; sauté 8 minutes or until crisp-tender.

Add orange juice and next 5 ingredients (orange juice through pepper); cook over medium-low heat 8 to 10 minutes or until carrots are tender, stirring occasionally. Transfer mixture to a serving bowl; sprinkle with sesame seeds; toss gently.
