Orange Glazed Pork Loin

Ingredients:

1 (2 - 2 1/4 pound) rolled, pork loin roast
1/2 cup orange marmalade
1 tablespoon Dijon mustard
1 teaspoon dried thyme
cooking spray

Preheat oven to 325 degrees. Unroll roast; trim fat. Reroll roast; secure at 1 inch intervals with heavy string.

Combine marmalade, mustard and thyme in a bowl; stir. Brush 1 tablespoon orange mixture over roast.

Place on broiler pan coated with cooking spray. Insert meat thermometer into thickest portion of roast. Bake at 325 degrees for 1 hour and 45 minutes or until meat thermometer registers 160 degrees, basting once with orange mixture. Let stand 15 minutes before slicing.

Bring remaining orange mixture to a boil; reduce heat and cook 2 minutes. Serve with roast.
